Low Carb Cauliflower Hashbrowns

Ingredients:

  • ½ Head Cauliflower
  • ¼ brown onion
  • 1 egg
  • 1 teaspoon of salt
  • 1 teaspoon of pepper

Method:

Step 1: Grate the cauliflower into fine pieces that resemble rice

Step 2: Finely chop the onion.

Step 3: Combine cauliflower, onion, salt, pepper and egg into a medium side bowl. 

Step 4: Spoon a small amount (approx 10cm wide) of the mixture onto a hot nonstick pan. 

Step 5: Cook for about 2 minutes and then carefully flip. Cook for a further 2cm before removing from the pan. Enjoy!
