Step 1: Preheat oven to 180 °C
Step 2: In a medium sized bowl mash ½ banana. Add the egg, chopped apple and almond milk. Stir until well combined.
Step 3:In a separate bowl mix in the dry ingredients (protein, oat flour, coconut flour, cinnamon & baking powder) until well combined.
Step 4: Mix the wet and dry ingredients together. Depending on which brand of protein you use, the mix may be a little bit dry. Add extra almond milk if required.
Step 5: Lightly grease a muffin tray and add the batter. This makes approximately 6 muffins.
Step 6: Bake for 10 minutes or until very lightly toasted. Be very careful not to overcook.
