Erins Healthy Pancakes

Ingredients:

  • 1 Cup blended oats
  • 1 Whole egg
  • 2 Egg whites
  • 2 Tablespoons natural Greek yogurt
  • 1 Banana
  • 1/4 Teaspoon of bi-carb soda
  • Shredded coconut to decorate

Method:

  1. Mash banana in a large bowl
  2. Mix in the eggs, yogurt, oats & bi-carb (stir until combined)
  3. Scoop into large non-stick saucepan
  4. Cook until bubbles appear, flip and cook through

Optional:

  • Add a scoop of your favourite protein to add a hit of protein

 

Serve with fresh fruit and if you're feeling like a treat a scoop of ice-cream!
